怀胎豆腐也就是炸豆腐酿肉碎,裹上面糊放入锅中油炸后,再加入花椒粒、姜蓉与辣豆酱等等调味料一同拌抄即可。做法有点复杂,但是尝起来十分香辣可口!

    Directions

    Step 1

    将材料部分的调味料与肉碎混合均匀,朝同一个方向搅拌至有黏性,再加入姜蓉及葱白碎拌匀成肉馅。Mix the seasoning and minced pork in the ingredients part evenly, stir the mixture clockwise until it forms a paste, then add minced ginger and minced green onion and mix well.

    Step 2

    在方块豆腐中间切开一个洞,挖出少许豆腐,将适量肉馅填入豆腐内,再裹上面糊,放入热油中炸至香脆,捞出沥油片刻,再回锅炸多一次,备用。Cut a hole in the middle of the cubed tofu, dig out a little tofu, stuff with meat paste, coat in batter then fry it in hot oil until crispy, remove and drain for a while, return to the wok and quickly fry a while, set aside.

    Step 3

    锅中留少许油,炒香调味料(A)后,加入调味料(B)煮滚。Leave some in the wok, sauté seasoning (A) until fragrant, add seasoning (B) and bring to a boil.

    Step 4

    把炸好的豆腐重新放入,加入葱花和辣椒碎拌炒一下起锅,淋上少许熟油便可盛碟。Put back the fried tofu, stir fry with chopped green onion and chili for a while, serve on plate and pour some cooked oil and serve.
